摘要

Abstract

To study the technology of ultra high pressure extraction and analysis its antioxidannt activity of polysaccharides from pulp pitaya stem, on the basis of single factor experiments, the optimal processing conditions were determined by means of response surface analysis and Box-Behnken design. The results showed that the optimum extraction conditions of the polysaccharides from pulp pitaya stem were as follows: liquid to solid ratio10:1 (mL/g), pressure 300 MPa and extraction time 4min. Under the conditions, the extraction yield of the polysaccharides from pulp pitaya stem reached ( 2.83 ±0.02)%. The polysaccharides from pulp pitaya stem had the ABTS and DPPH scavenging activity. The mass concentration of IC50 was 4.3 mg/mL and 5.5 mg/mL, respectively. This study could provide useful references for the development and exploitation of the polysaccharides from pulp pitaya stem.
