普通鸡蛋、土鸡蛋和乌鸡蛋的蛋品质比较研究
Comparative Study on the Egg Qualities of Ordinary Eggs,Native Eggs and Dark Eggs

Abstract
In order to compare the egg qualities of ordinary eggs,native eggs and dark eggs,the experiment was conducted to study the quality of three kinds of eggs sold from a large supermarket in Tianjin city.The results showed that the egg weight,egg white weight and egg shell weight of ordinary eggs were significantly higher than that of native eggs(P<0.05).Egg yolk weight of native eggs was significantly lower than that of the other two (P<0.05),the ratio of egg yolk and egg yolk color of dark eggs were significantly higher than that of the others (P<0.05).Egg protein ratio of ordinary eggs and native eggs was significantly higher than that of dark eggs (P<0.05),the HA units of native chicken eggs were significantly higher than that of ordinary eggs and black eggs (P<0.05),the ratio of eggshell and eggshell strength of dark eggs were significantly lower than that of the other two (P<0.05),the eggshell thickness of ordinary eggs was significantly higher than that of native eggs and dark eggs (P<0.05).These results can provide a theoretical reference for the selection,of eggs for different groups of people.关键词
