Abstract

A high performance liquid chromatography with mass spectrometric detection method was established for the direct determination of ethyl carbamate in Chinese rice wine. The samples were diluted with methanol-water (v:v=25:75), filtered through 0.22μm microporous membrane. The LC separation was performed on a Waters HPLC system with a SunFireTM C18 column, methanol and 0.1%(v/v)acetic acid aqueous solution as the mobile phase. The ethyl carbamate was determined in the mode of electrospray positive ionization (ESI+) and multiple reaction monitoring (MRM). The D5-EC was used as the internal standard for the quantitative analysis . Carbamate ethyl ester had good relationship between 2~500 mu g/L and the correlation coefficient was 0.9922,the detection limit of ethyl carbamate in yellow rice wine was 1.8mu g/L, and the quantitative limit was 5.0 mu g/L, and the recovery rate was 88.9%~103.1%. The RSD of relative standard deviation was 1.8%~5.6%, this method is easy, fast, accurate and suitable for the determination of ethyl carbamate in Chinese rice wine.
