摘要

Abstract

Glycinin is one of the most thermal stability soybean antigenic protein, as well as an allergen, which is the main component causing the allergy and diarrhea of animals.The paper mainly expounded the anti-nutri-tional action and resistance mechanism of glycinin for piglets, calves and fishes, analyzed the detection meth-ods of glycincin in soybean and its by-products, and emphatically introduced the latest research progress of en-zyme linked immunosorbent assay ( ELISA) detection method, aiming to provide references for the use of soy-bean and its by-products.
