48批燕窝的亚硝酸盐含量测定及浸泡和炖煮对燕窝中亚硝酸盐含量的影响
Content Determination of Nitrite and Effects of Soaking and Stewing on Its Content in 48 Batches of Edible Bird' s Nest
摘要
Abstract
OBJECTIVE:To determine the content of nitrite in 48 batches of edible bird ' s nest ( white, yellow and blood bird's nest) which were randomly extracted from 18 productive origins in Hong Kong market , and to probe into the effects of soaking and stewing on nitrite in edible bird's nest.METHODS:According to national standard (GB 5009.33—2016), content of nitrite was determined by post-column reduction and derivatization and ion chromatography .The detection wavelength was 532 nm.The determined samples were bird 's nest material , and bird's nest after soaking and stewing.RESULTS:The range of nitrite content in 48 batches of edible bird ' s nest was 0-6429.58 mg/kg.And the content of edible bird ' s nest in 6 samples were <30 mg/kg, accorded with the Letter from the Ministry of Health on the Temporary Management of the Limited Quantities of Nitrite in Edible Bird 's Nest .For nitrite can be soluble in water , after soaking and stewing , nitrite can be removed efficaciously , with average removal rate of >90% and the maximum can attain 97%.After soaking and stewing , nitrite could not been detected in samples .CONCLUSIONS: Nitrite was found in 48 batches of edible bird ' s nest , the average content of nitrite from highness go to lowliness in turn were respectively white bird's nest >yellow bird's nest >blood bird's nest.After soaking and stewing , nitrite can be removed , and the content of nitrite is lower than that of the average determined level .关键词
