马铃薯皮中黄酮类物质的提取及其抑菌活性研究
Research on Extraction and Antibacterial Activity of Flavonoids in Potato Peel

Abstract
Taking potato peel as experimental material,the extraction of all flavonoid in potato peel with ultrasonic method was studied through single factor and orthogonal experiments,and its optimal extrac-tion process was determined.Besides,the antibacterial activities of the extracted flavonoids on five kinds of gram bacteria in vitro were tested.The results showed that the optimum extraction conditions were:the ultrasonic power was 400 W,solid-to-liquid mass ratio was 1:25,ethanol concentration was 80%, and ultrasonic extraction time was 4 min.Under these conditions,the maximum extraction yield of fla-vonoids from potato peel powder was 2.92%.The flavonoids extracted can effectively inhibit the growth of the tested bacteria,especially to gram-positive bacteria.It has the same antibacterial activities to Staphylococcus aureus and Salmonella typhimurium compared with tea polyphenol,while lower to Ba-cillus subtilis ,E .enteritidis and Proteus vulgaris .关键词
