摘要

Abstract

Taking potato peel as experimental material,the extraction of all flavonoid in potato peel with ultrasonic method was studied through single factor and orthogonal experiments,and its optimal extrac-tion process was determined.Besides,the antibacterial activities of the extracted flavonoids on five kinds of gram bacteria in vitro were tested.The results showed that the optimum extraction conditions were:the ultrasonic power was 400 W,solid-to-liquid mass ratio was 1:25,ethanol concentration was 80%, and ultrasonic extraction time was 4 min.Under these conditions,the maximum extraction yield of fla-vonoids from potato peel powder was 2.92%.The flavonoids extracted can effectively inhibit the growth of the tested bacteria,especially to gram-positive bacteria.It has the same antibacterial activities to Staphylococcus aureus and Salmonella typhimurium compared with tea polyphenol,while lower to Ba-cillus subtilis ,E .enteritidis and Proteus vulgaris .
