摘要

Abstract

Limited by storage technology and the high cost of transportation,the markets still focus on the use of red ginseng and the buming products.With the development of pharmaceutical industry,food industry and the improvement of life quality,fresh ginseng is becoming more popular among people and the demand for fresh ginseng is becoming more and more big.Therefore,to study the preservation technology of ginseng storage and physiological changes is of great significance to the ginseng industry.Based on the problems of the process ofpostharvest,we review the latest progress in the study of preservation technique and physiology after harvesting.Then put forward the future research direction.
