摘要

Abstract

Sulfate content, hygroscopicity and moisturizing capacitiy and in-vitro antioxidantive activity of Ulva polysaccharide and its deproteinated and degradation products were determined and analyzed. Results showed that sulfate content of crude Ulva polysaccharide (CUP) dropped significantly (P<0.01) during deproteinization by alkaline protease, but almost remained the same level during partial degradative modification (P > 0. 05). CUP and its deproteinated and degradation products all maintained great hygroscopicitiy and moisturizing capacity. After degradation, total anti-oxidative capacity (scavenging ability on ABTS+ ·) and scavenging ability on ·OH significantly enhanced (P<0.05), but its scavenging ability on DPPH·, O-· 2 and reducing ability on K4[Fe(CN)6] did not change significantly (P>0.05). While after deproteinization, all antioxidant activities of sample descended significantly (P<0.01).
