摘要

Abstract

Purple potato pigment color range and absorption spectra properties were studied.With purple potatoes on sale from zhengzhou as samples,determination of pigment was conducted by the potential titration and absorption spectrophotometry after the pigment had been extracted under the condition of optimization.The results showed that the absorption spectrum peaks at about 530 nm in acidic solution,peak between 600 nm to 620 nm in alkaline solution and the peaks disappear in strong alkaline solution.The purple potato pigment color ranges from 7.3 to 7.8,within 0.5 pH unit only,indicating that the color change is very sharp.It can be used as a natural pH indicator and safe food colorants for use in the food industry.
