Quality variation and process optimization of hot air drying of Honeysuckle

Abstract
[Objective]In order to solve the problem in the drying process of honeysuckle,the optimum process of hot air dr-ying of honeysuckle was obtained.[Methods]The drying characteristics of honeysuckle were investigated under different air temperatures(40,45,50,55 and 60 ℃),loading quality(50,100,150 and 200 g)and pretreatment periods(0,0.5,1,2 and 3 min).According to result of single factor tests,an orthogonal experiment was designed with the influential factors of air temperatures(45,50 and 55 ℃),loading quality(50,100 and 150 g)and pretreatment periods(1,2 and 3 min).[Re-sults]The research of the hot air drying characteristics of the honeysuckle implied that,the drying temperature,the loading quality and the pretreatment periods had significant influence in the honeysuckle drying;the drying process of the honey-suckle reduced with the increase in the drying temperature and the pretreatment periods and it increased with the increase of the loading quality;the hot air drying of the honeysuckle belonged to the falling rate period.The further research of the hot air drying characteristics of the honeysuckle was,evaluated and analysed the degree of correlation between the nine frequent used models of the agricultural products thin layer drying and the experimental statistics through the Square coefficient of de-termination(R2),Chi-square test value(χ2)and root mean square error(RMSE),which found that the Wang and Singh model was the best correlated with the experimental statistics,along with the regression between the model parameter and the dry temperature(40,50 and 60 ℃),established the mathematical model for the hot air drying of the honeysuckle.We got the regular pattern of the average drying rate,chromatic value Δ E* and the chlorogenic acid content.The optimum pro-cessing parameters after orthogonal optimization were drying temperature 50 ℃,loading quality 100 g and pretreatment peri-ods 3 min.[Conclusion]The optimized hot air drying process could provide technical and theoretical basis for improving the drying quality of honeysuckle.关键词
