Abstract

RP-HPLC fingerprint was established for proteins in goat milk powder to systematically evaluate goat milk quality via multicomponent analysis of milk proteins. Proteins from different goat milk were analyzed by (reversed-phase high-performance liquid chromatography) RP-HPLC. A chromatographic fingerprint similarity evaluation system and principal component analysis were utilized to correlate signals from different samples and identify milk quality. Seven caprine milk samples and two ovine milk samples were studied. The results show that major proteins including κ-CN, α-CN, β-CN, α-La and β-LgB from different samples have heterogeneous components and different retention times and mass fractions. Fingerprint similarity results show that the similarity among 6 caprine milk samples (G-3, G-4, G-5, G-6, G-8 and G-9) is 0.953~0.989, and the similarity among G-2 and the other 6 caprine milk samples is 0.721~0.832, while the similarity between the 2 ovine milk samples is 0.996. Principal component analysis indicates that the ovine and caprine milk samples can be classified into two categories and the difference can be easily identified. The proteins in the samples can be used as identification components to reflect the category and quality of goat milk powder. The method established in this paper is useful for quality evaluation and control of dairy products.
