红糖中粗蛋白、非蛋白氮及氨基酸含量相关性探讨
Discussion of Correlation between Crude Protein, Non-protein Nitrogen and Amino Acid Content in Brown Sugar

Abstract
Determination of the crude protein, non-protein nitrogen and amino acid content of 39 brown sugar samples supplied by 12 different production enterprises in China was realized, which used Kjeldahl method and acid hydrolysis-automatic amino acid analyzer. The result showed that the content of crude protein in brown sugar was 0.7~3.5 g/100g, with a certain regional difference among them, the content of non-protein nitrogen was 0.1%~0.6%, the content of amino acid was 0.2~1.6 g/100g. The ratio of amino acid content and crude protein content in brown sugar was 24%~47%. The tests provided the necessary basic reference data for further development and utilization of crude protein and amino acids in brown sugar.关键词
