Abstract

The glucosinolate composition and content in the leaves and bolting stems of eleven flowering Chinese cabbage (Brassica campestris L. ssp. chinensis var. utilis Tsen et Lee)varieties were studied through high performance liquid chromatogra-phy(HPLC)analysis. Seven kinds of glucosinolates were detected in both the leaves and the bolting stems of eleven flowering Chinese cabbage varieties, including three kinds of aliphatic glucosinolates[progoitrin(PRO), gluconapin(NAP)and glu-cobrassicianapin(GBN)],and four kinds of indolic glucosinolates[4-hydroxyglucobrassicin(4OH),glucobrassicin(GBC),4-methoxyglucobrassicin(4ME)and neoglucobrassicin(NEO)]. There was a significant difference in both total glucosinolate content and individual glucosinolate content among various flowering Chinese cabbage varieties. The total glucosinolate content in the bolting stem of variety No.4 was the highest,reaching 50.09 μmol/100 g FW. The total glucosinolate content in the leaf of va-riety No. 2 was the highest, reaching 34.17 μmol/100 g FW. As for the same variety, the glucosinolate content in bolting stem was significantly higher than that in leaf, and the content of aliphatic glucosinolate was significantly higher than the content of in-dolic glucosinolate. Among the glucosinolate compositions of flowering Chinese cabbage,the contents of NAP and PRO were high-er.
