摘要

Abstract

Foodborne pathogen is one of the important hazard factors for food safety and human health. With the emergence and transmission of antimicrobial resistance,the potential risk of foodborne pathogens has increased,and become a universal concern worldwide.Here we review four main mechanisms of antimicrobial resistance,including impermeable barriers,efflux pumps,resistance mutation and drug inactivation.We also systematically introduce the research progress of antimicrobial resistance mechanism of foodborne pathogens,and discuss future research needs.The paper can provide the basic information for further research on the antimicrobial resistance mechanism of foodborne pathogens,and the scientific evidence for controlling the risk of antimicrobial resistant foodborne pathogens.
