摘要

Abstract

Food hazards can lead to a variety of food-borne diseases,and threaten humanhealth.Food materials can be contaminated during process of production,harvest,transportation and storage,thereby to bring harmful microbes,toxins or chemical substances into foods.Detecting food hazards is important to ensure food safety.After years of development,the detection methods for various hazards have made a great progress.Faster,more sensitive and cost-effective methods have been established.In this review,we mainly summarize the current existing biological and chemical food hazards and methods for their detection.
