摘要

Abstract

According to the second plate counting method based on GB 4789.30-2016"National food safety standards,Food microbiology analysis Detection of Listeria monocytogenes"and JJF 1059.1-2012"Evaluation and representation of uncertainty measurement",we analyzed sources of measurement uncertainty in plate counting of Listeria monocytogenes to establish evaluation methods for such uncertainty.By building a mathematical model T=AB/Cd,uncertainty of measurements consisted of three parts: sample preparation,sample dilution and repeated measurement process.The effect of sample's memory acquisition, sample homogeneity, medium configuration time, culture medium sterilization temperature,incubator temperature,and culture time contributed little to the uncertainty.The test result of Listeria monocytosisplate counting method was(2.9±1.2)×106CFU/g.The extended uncertainty of 10 times for the same sample was 1.2 ×106.
