不同月龄湖羊及其杂种乳羔肉脂肪酸含量的研究
Fatty Acid Content of Different Ages of Hu Sheep and its Hybrid Lamb Mutton
摘要
Abstract
To study the fatty acid content in lambs mutton,lambs of Hu sheep,DH (Dorper ♂ × Husheep ♀) and SH (Suffolk ♂ × Hu sheep ♀) at 2-month-old and 4-month-old were randomly select ed,5 lambs in each group.All lambs were slaughtered and the samples of longissimus dorsi and leg muscle were collected to mensurate the content of fatty acids.The results showed that the contents of saturated fatty acid (SFA) at 2-month-old were lower than that at 4-month-old in the longissimus dorsi and leg muscles (P＜0.05),and the unsaturated fatty acids (MUFA) in DH were significantly higher (P＜0.01).The MUFA of the longissimus dorsi in Hu sheep was lower and polyunsaturated fatty acids (PUFA) were higher (P＜0.05),that of DH was the contrary,while that of SH didn't change remarkably(P＞0.05).In the leg muscles,MUFA and PUFA of Hu sheep at 2-month-old were significantly higher than that at 4-month-old (P＜0.05),MUFA of DH at 2-month-old was significantly higher than that at 4-month-old (P＜0.01).It is worth noting that the contents of capric acid and stearic acid also were increased with age.The contents of polyunsaturated fatty acids in longissimus dorsi and leg muscle of all lambs of 2-month old were higher than that of same breed lambs of 4-month-old.Among polyunsaturated fatty acids,linoleic acid and linolenic acid,which were necessary for human body,were of same tendency.关键词
