不同涂膜处理对冷鲜羊肉贮藏品质的影响
Effects of Treating with Different Coating Films on Storage Quality of Chilled Mutton

Abstract
To understand the effect of carboxymethyl cellulose (CMC),sodium alginate and chiotosan treatments on chilled mutton quality under 0 ~4℃ storage,the total bacterial count,pH value,juice loss,color and luster,and volatile base nitrogen(TVB-N) were determined and analyzed.The results showed that 2% chitosan acetic acid solution could effectively inhibit the growth and reproduction of bacteria on the surface of chilled mutton,slow down the increase of pH value and TVB-N content,reduce the juice loss rate,and prevent the meat color indexes (L*,a*,b *) decrease rapidly.In conclusion,2% chitosan acetic acid solution significantly improved the storage quality of chilled mutton,while 2% CMC and sodium alginate solutionhad no significant effects on that.关键词
