Abstract

[Objective]The aim was to extract proanthocyanidin from'Zijuan' tea(Ca mell ia si nensis var.Assamica)and analyze its polymeriza-tion degree.[Method]The extraction parameters including water bath temperature,extracting time,and crumble mesh were investigated to find out the optimal extracting condition of proanthocyanidin from 'Zijuan' tea(Camellia sinensis var.Assamica),and the polymerization degree of proanthocyanidin in extract was analyzed.[Result]The proanthocyanidin concentration became higher in the extraction solution with the growing level of each factor.And finally,with the condition of 70℃water bath temperature,60 minutes' extracting time and 30 crumble meshes,we could obtain the crude extraction of proanthocyanidin from 'Zijuan' tea effectively.There was about 64.11% of proanthocyanidin in this tea extraction on the average;furthermore,the average degree value of polymerization was 3.09,which indicated that the proanthocyanidin mainly existed in the oligo-type in the 'Zijuan' tea leaves.[Conclusion]The result can provide theoretical basis for further research and application of proanthocyanidin.
