摘要

Abstract

With the assistance of ultrasonic,gingerol was extracted from ginger by mixed solvent of anhydrous alcohol and Petroleμm ether with optimal ratio. The orthogonal test was used to optimize the technology of extraction by study the factor such as the ratio of mixed solvent,cold soak time,ultrasonic extraction time,solid-liquid ratio which affect the extracting rate. The results show that the rate of gingerol extraction was 3.11% under optimal conditions. And gingerol has good antioxidant activity.
