摘要

Abstract

Six kinds of spectroscopic techniques (ultraviolet-visible,near infrared,mid infrared,fluorescence,raman and nuclear magnetic resonance spectroscopy) and the application in the quality control of coffee were summarized.The description of origin,distribution,flavor and functional characteristics of coffee could help consumers have further understanding the characteristics of coffee.Spectroscopic methods provide a relatively rapid and low-cost alternative to traditional chemical composition or sensory analyses.The non-destructive spectroscopic techniques provide analytical information without damaging the sample.Due to the characteristics of the spectrum,spectroscopic techniques possess irreplaceable advantages in the quality control of coffee compared to other traditional techniques.In general,spectroscopic techniques combined with chemometrics can achieve a better performance in the the quality control of coffee.
