摘要

Abstract

Four kinds of wall materials such as whey protein isolate ,sodium caseinate ,stearic acid and zein were used to prepare Antarctic krill oil nanoemulsion by emulsifying solvent evaporation method.The entrapment efficiency ,particle size ,Zeta potential ,morphology ,thermal stability ,the fatty acid composition and relative content of Antarctic krill oil nanoemulsion were analyzed.The results showed that Antarctic krill oil nanoemulsion prepared with sodium caseinate as wall material had the embedding rate of (76.03 ± 1.27)% ,the particle size of (141.92 ± 3.38) nm and Zeta potential of (-22.65 ±3.32) mV.Scanning electron microscopy analysis showed that the nanoparticles in emulsion were spherical and smooth surface without wrinkles.Differential scanning calorimetry analysis showed that nanoemulsion had higher thermal dissolution temperature of (62.84 ± 0.53) ℃and good thermal stability at room temperature.Compared with Antarctic krill oil ,the fatty acid composition and relative content of Antarctic krill oil nanoemulsion remained no significant change.The above results indicated that the Antarctic krill oil nanoemulsion prepared by emulsifying solvent evaporation method using sodium caseinate as wall material could well maintain the functional properties of Antarctic krill oil.
