Abstract
The content of soluble sugars and ethanol in the fermentation is key index to determine the fermentation process. The rapid determination of the content of sugars and ethanol is very important to fermentation process optimization and control. For the content determination in solid state,sugars and ethanol are usually required to transfer from solid phase to liquid phase in advance. The extraction and quantitative detection methods of soluble sugars and ethanol in solid bagasse are reviewed in this paper. Qualitative and quantitative models built by using near infrared spectroscopy in solid fermentation process of ethanol are reviewed in this paper, too. Finally, suggestions are made on the determination of soluble sugars and ethanol,as well as process monitoring technology in solid state fermentation.关键词
