Abstract
Objective: To establish a preparation of cerealose, through the study of ancient cerealose preparation. Methods: The trait, production method and material of cerealose in ancient books were studied. The process parameters were optimized. Results: The glutinous rice was the best materials for cerealose and only soft cerealose can be used as a medicine. "Qimin Yaoshu" detailed about cerealose production process, which included five steps: germination, grain steaming, mixture, fermentation and cooking. The effects of the ratio of solid to liquid, the malt dosage, hydrolysis time, and hydrolysis temperature on the yield of cerealose were studied by the single factor and orthogonal test. The results showed that optimum parameters were the ratio of solid to liquid 1∶1, the malt dosage of 20％, the hydrolysis time of 10 h, and the hydrolysis temperature at 55 ℃. Conclusion: This method is simple, reliable, it can provide a reference for the industrial production of cerealose.关键词
