Research Progress in Characteristics and Regulation of Fatty Acid Composition of Meat and Milk Products in Ruminants

Abstract
Meat and milk of ruminants are the main source of saturated and trans fatty acids in human diet, they also provide high-quality protein, essential trace elements and fat-soluble vitamins for the body. Clinical studies have shown that excessive intake of saturated fatty acids and synthetic trans fatty acids increases the risk of cardiovascular and cerebrovascular diseases. There is increasing evidence to indicate that diet is closely relat-ed to the evolution of chronic human diseases. This article reviewed the metabolic mechanism of fatty acid syn-thesis in ruminant production and the research progress in improving fatty acid composition of meat and milk products of ruminants by nutritional regulation and genetic selection approaches, in order to provide the refer-ence for optimizing the quality of meat and milk products of ruminants.[ Chinese Journal of Animal Nutrition, 2019, 31(3) :1001-1008]关键词
