摘要

Abstract

[Objective] The technology of chitosan complex tea polyphenol derivative film preservation was optimized.It provided theoretical basis for safe storage and preservation of edible fungi after delivery.[Method] Pleurotus ostreatus was treated with chitosan as substrate and tea polyphenol as functional additive.The color, shape, hardness and odor were measured and compared.[Result] The optimal formula combination was obtained by analyzing the effect of composite coating agent:the quality of chitosan/the quality of tea polyphenols=5∶1.[Conclusion] Tea polyphenols could significantly increase the antioxidant capacity of the chitosan composite membrane.As the concentration of tea polyphenols increased, the antioxidant capacity of the composite membrane increased gradually, but the high concentration of tea polyphenols was not conducive to the preservation of Pleurotus ostreatus.
