Abstract

In order to make full use of the great advantage of pitaya cultivation in greenhouses in northern China, the physical and chemical indexes and volatile components of pitaya honey obtained from the development of pitaya flowers planted in greenhouses by bees were analyzed in this paper. The results showed that the quality of the prepared pitaya honey was excellent, which met the industry first-class standard, and its maturity was high. The reducing sugar content (89.02%) and amylase activity (16.52 mL·g-1·h-1) ) were significantly higher than the industry standard. The volatile components of pitaya honey showed that the volatile flavoring substances were volatile. It was mainly composed of rose, citrus and lemon aromas, which gave the pitaya honey a more intense sweet aroma. The results of the experiment provided some guidance for the further development of the value of pitaya honey.
