摘要

Abstract

The potential of PAW-ice for the inactivation of Listeria monocytogenes in pure culture or artifi-cially inoculated on salmon strips was firstly presented. Meanwhile, the main active substances in the plasma were detected by optical emission spectroscopy, and the oxidation-reduction potential ( ORP ) , pH value and electrical conductivity were also determined. Moreover, the effects of PAW-ice on the total volatile basic nitrogen ( TVB-N) and pH of salmon strips were determined. The results showed that, com-pared with sterile water-ice, PAW-ice had a remarkable effect on the pure culture of L. monocytogenes, which could reduce the bacteria by 1~3 lg CFU/mL, and the sterilization efficiency depended on the PAW’s preparation time, volume and PAW-ice processing time. In addition, during storage at 4℃ for 5 days, compared with sterile water-ice, PAW-ice could inhibit the growth of L.monocytogenes on the sur-face of salmon strips and slow down the increase of TVB-N and pH value. Thus, PAW-ice had a good prospect in controlling L.monocytogenes on the surface of salmon strips.
