Effects of different extraction methods on the quality of dietary fiber of defective jujube
摘要
Abstract
The present study was aimed to determine the effects of different extraction methods on the quality of soluble dietary fiber (SDF) and insoluble dietary fiber (IDF) in defective jujube.[Methods] Defective jujube w as used as test materials ,and dietary fiber was prepared by three different methods including chemical method ,enzy‐mic method ,and fermentation method.T he effects of different extraction methods on the quality of soluble dietary fi‐ber (SDF) and insoluble dietary fiber (IDF) in defective jujube were compared and determined based on the physical and chemical properties (water holding capacity ,sw elling power and oil holding capacity ) ,functional characteristics (cation exchange capacity ,glucose adsorption capacity ,cholesterol adsorption capacity and nitrite ion adsorption capac‐ity ) ,and antioxidant activities (DPPH clearance rate ,ABTS clearance capacity and iron ion reduction ability ).[Re‐sults] Studies results indicated that the oil holding capacity ,glucose adsorption capacity ,NO -2 clearance capacity ,and antioxidant capacity of SDF extracted by different methods were significantly better than those of IDF ,while cholester‐ol scavenging ability was less than that of IDF .SDF prepared by enzymic method and fermentation method was signifi‐cantly superior to jujube pow der in term of oil holding capacity ,glucose adsorption capacity ,NO -2 clearance capacity , and antioxidant capacity (P<0 .05) ,and greater oil holding capacity and glucose adsorption capacity were detected in SDF prepared by chemical method ,while there was no significant difference betw een other items and jujube powder . IDF in all three different treatments displayed better physical and chemical properties than those of jujube powder . [Conclusion] Physical and chemical properties ,functional characteristics and antioxidant activities of soluble dietary fi‐ber (SDF) and insoluble dietary fiber (IDF) in defective jujube would be significantly influenced by different extract methods .And enzymatic hydrolysis method was the best way to produce high‐quality dietary fiber .关键词
