摘要

Abstract

The purpose of the test was to comparison of antioxidant properties between β-sitosterol and Vc and simultaneously research the antibacterial activity of β-sitosterol.The antioxidant activity of β-sitosterol and Vc were studied and compare by evaluate the ability to scav-enge DPPH radicals,hydroxyl radicals,and superoxide anion radicals.And use the Oxford Cup method to determine antimicrobial activity of β-sitosterol against Staphylococcus aureus,Escherichia coli and Salmonella.The results show that under certain experimental conditions,the scavenging rates of β-sitosterol on hydroxyl radicals and superoxide anion radicals were 93.8%and 23.5%,respectively,which were equivalent to the effects of Vc,but β-sitosterol had no scavenging effect on DPPH free radicals.β-sitosterol had certain inhibitory effects on Staphylococcus aureus,Escherichia coli,and Salmonella,the inhibition rate follows the concentration of β-sitosterol increases,and its inhibitory effect on Staphylococcus aureus was superior to the other two bacteria.
