摘要

Abstract

This paper reviewed the research progress of nutritional value and health function of goat milk products.The nutritional components of goat milk products include protein,fat,sugar,vitamins and minerals.Protein is mainly composed of whey protein and casein;fat is mainly composed of saturated fatty acids,monounsaturated fatty acids and polyunsaturated fatty acids;sugars mainly include lactose and other small amounts of monosaccharides and disaccharides;vitamins mainly include vitamin A,vitamin D,vitamin B2(riboflavin)and vitamin B12;minerals include calcium,phosphorus,zinc and selenium.Goat milk products have health functions in promoting growth and development,enhancing immunity,improving digestive system function,preventing cardiovascular disease,anti-oxidation and anti-tumor,etc.These functions provide scientific basis for the promotion and application of goat milk products.
