乳酸菌富硒及其体外抗氧化能力的研究
Research on Selenium-enriched Ability of Lactic Acid Bacteria and Its Antioxidant Capacity in vitro

Abstract
To explore the selenium(Se)-enriched ability of lactic acid bacteria(LAB)and its antioxidant activity in vitro,nine strains of three species of LAB(Lactobacillus plantarum,Pediococcus pentosaceus and Lactobacillus brevis)are selected as the research objects.It is found that sodium selenite has no impacts on the growth and reproduction of the nine strains of LAB when they are inoculated in MRS medium containing 50 μg/mL(0.289 mmol/L)sodium selenite.The experiment results of selenium-enriched rate of LAB reveal that Lactobacillus plantarum,Pediococcus pentosaceus and Lactobacillus brevis show significant intraspecific and interspecific differences in Se-enriched ability.In particular,the Se-enriched rates of Lactobacillus plantarum(such as ZW19,ZW107 and ZW10)and Lactobacillus brevis(such as DR104)are all more than 50%,and ZW107 shows the highest Se-enriched rate of 65.97%.Moreover,the results of scanning electron microscopy show that Se particles appeared after ZW107 enriches.In addition,antioxidant experiments in vitro show that the superoxide anion content of the nine strains of Se-enriched LAB obviously decrease and the hydroxyl radical scavenging capacity remarkably increase,indicating that the antioxidant capacity of Se-enriched LAB is enhanced after the enriching of Se.This study confirms that LAB has great potential Se-enriched ability,and the antioxidant activity of Se-enriched LAB significantly improves,which provides a scientific basis for supplementing selenium using LAB as carrier for human.关键词
