摘要

Abstract

In this study,a self-designed biofilm-forming culture device was used,with 8 lactic acid bacteria probiotics as strains,MRS was compounded with cabbage,celery,cucumber and wax gourd vegetable juice as nutrient solution,and water-insoluble vegetable dietary fiber in nutrient solution as carrier for continuous dynamic culture.The results showed that the bac-terial concentration in the composite biofilm of lactic acid bacteria-vegetable dietary fiber could reach 2.24×1012 CFU/g after 7 days of incubation at 37℃.The results of microscopic characterization and flora structure analysis showed that both Lactobacillus and Pediococcus were enriched.The storage test and simulated digestion test of the obtained biofilms of lactic acid bacteria-vegetable dietary fiber were conducted,and the results showed that the viable count remained above 106 CFU/g after 6 months at 25℃and above 1012 CFU/g after simula-ted digestion.The test results can provide theoretical basis and technical support for the de-velopment of high bacterial concentration probiotics starter cultures,probiotics embedding materials and probiotics dietary supplements.
