蛹虫草茯茶的加工工艺及其代谢产物特征分析
Analysis of the processing technology of Cordyceps militaris Fu tea and the characteristics of its metabolites

Abstract
In order to clarify the critical steps of the processing technology and the metabolites of Cordyceps militaris Fu tea,the effect of steam time and raw material ratio on the quality of Cordyceps militaris Fu tea was analyzed in this study,after that the metabolites of Cordyceps militaris Fu tea were comprehensively analyzed by liquid chromatography-mass spectrome-try.The results showed that the tea polyphenol content of Cordyceps militaris Fu tea with the 8%Cordyceps militaris complexed with black tea and steamed for 10 min was 47.84±2.33 mg/g,significantly lower than that of traditional Fu tea.In addition,the protein content of Cordyceps militaris Fu tea reached 233.89±4.30 mg/g,significantly higher than tradition-al Fu tea.The results of the metabolomic analysis showed that 119 metabolites were signifi-cantly altered in Cordyceps militaris Fu tea compared to Fu tea(VIP>2.0,p<0.05),of which 72 metabolites showed a significant increase in relative content and 47 metabolites showed a significant decrease in relative content.Of these,amino acid metabolites comprised the most significant proportion,and the number of upward revisions was significantly higher than the number of downward revisions.Metabolic pathway analysis confirmed that the dif-ferential metabolites between Cordyceps militaris Fu tea and Fu tea are mainly produced through the metabolic pathways of arginine and proline metabolism,amino sugar and nucleo-tide sugar metabolism,nicotinate and nicotinamide metabolism,and arginine biosynthesis.This study initially explored the critical steps in processing Cordyceps militaris Fu tea and re-vealed its metabolite product characteristics.This study will lay the material and theoretical foundation for promoting the diversification of Fu tea products and further developing the functions of Cordyceps militaris Fu tea.关键词
