凤冈锌硒茶茶多酚提取工艺优化及其体外活性研究
Optimization of Extraction Process of Polyphenols from Fenggang Zinc Selenium Tea and Its Bioactivity in Vitro

Abstract
The polyphenols were extracted from Fenggang zinc-selenium tea using the ultrasonic-assisted method,and the yield was used as an indicator to discuss the optimal extraction process parameters.The response surface method determined opti-mal extraction conditions of Fenggang zinc selenium tea based on three single factor experiments of extraction time,materi-al-to-liquid ratio,and ethanol volume fraction.The optimal conditions obtained showed that when the volume fraction of ethanol was 59%,the extraction time was 54 min and the ratio of solid to liquid was 1:91 g/mL,the yield of tea polyphenols was the high-est,reaching 14.88%,which was close to the predicted value of 14.79%.The IC50 values of the DPPH scavenging rate and hydrox-yl radical scavenging rate were 0.87 mg/mL and 0.45 mg/mL,respectively;after dialysis for 20min minutes,the delayed absorption capacity of glucose reached 46.50%;the binding capacity with sodium bezoar cholate and sodium glycocholate reached 16.38%and 27.69%,respectively.The results showed good antioxidant activity,delayed glucose absorption,and cholate binding ability.This study provides a technical reference for further developing and utilizing zinc selenium tea.关键词
