Abstract

In 2018,the Yiling cattle was approved as a newly discovered bovine genetic resource by the National Commission of Genetic Resources.But the research on its growth performance and meat quality has been still fewer until now.In this study,the indicators of growth performance,slaughter performance and meat quality of adult fattening Yiling cattle were determined and compared with the imported A3 snowflake beef,in order to systematically evaluate the carcass and meat quality characteristics of Yiling cattle and provide basic data for the cattle breed improvement.The results showed that the dressing percentage,net meat percentage and meat/bone ratio of Yiling cattle after fattening were 58.92%,53.79%and 8.22∶1,which increased by 25.11%,38.28%and 73.10%compared with the non-fattening adult Yiling cattle,respectively.The high-grade beef rate was 15.35%,which was 7.87%and 25.20%higher than that of Luxi cattle and the hybrid off-spring of Black Wagyu cattle and Simmental cattle.In terms of meat quality,the marbling score of the Yiling cattle was above the moderate level,and the shear force was 3.95 kg.Compared with the A3 imported snow-flake beef,the Yiling beef had higher content of 15 amino acids except alanine,and the content of threonine,proline and methionine were 21.00%,28.04%and 52.37%higher,respectively;the contents of total saturat-ed fatty acids and unsaturated fatty acids were lower,however,the content of linoleic acid and eicosapentaeno-ic acid(EPA)were 2.17 times and 7.00 times higher than those in the imported A3 snowflake beef(P<0.01),respectively.In conclusion,Yiling cattle has the advantages in high output of high-grade and tender beef,obvious marbling and high protein content,showing strong fattening potential and specific breed charac-teristics,so it is a valuable resource for developing high-quality snowflake beef.The protection and utilization of Yiling cattle should be promoted through strengthening breed selection and expanding the population size in future.
