摘要

Abstract

A total of 20 strains of Agaricus bisporus were collected at home and abroad.The harvested fruiting bodies were stored at 4 ℃ for 7 days,and quality related indicators were measured to explore the changes in storage quality of different A.bisporus strains.The results showed that compared to other strains,the weight loss rate,L*value,total sugar content,and SOD activity of strains 901,XXX,K6,Fugu 38,and 8302 decreased more slowly,while the MDA content and PPO activity were lower and increased more slowly.This indicated that the fruiting bodies of these 5 strains were more tolerant to storage and had a longer shelf life of fresh mushrooms.
