茶产业是我国传统特色优势产业,茶叶加工技术的发展可推动茶产品的高质量生产和助力茶产业转型升级.文章综述了 2022年传统六大茶类及再加工茶茉莉花茶加工技术的最新研究进展,以及当前我国茶叶加工技术发展所面临的瓶颈与挑战,并结合时代和科技发展趋势预测茶叶加工技术未来发展方向,以期为后续茶叶加工技术的研究提供借鉴.

The tea industry is a traditional advantageous industry in China,and the development of tea processing technology can promote the production of high-quality tea products and assist in the transformation and upgrading of the tea industry.This paper reviewed the latest research progress on the processing technologies of six major tea categories and reprocessed jasmine tea in China in 2022,as well as the bottlenecks and challenges faced by the cur-rent development of tea processing technology in China.It also predicted the future development direction of tea processing technology based on the trend of the times and technological development,in order to provide reference for subsequent research on tea processing technology.
