摘要

Abstract

Meat adulteration is a major problem affecting the quality and safety of food in China,which not only harms consumers'health,but also impacts the stable order of the consumer market.Therefore,the detection of animal-derived ingredients is of great significance.At present,common testing standards in China for animal-derived ingredients can be divided into traditional morphological testing standards,testing standards based on proteomics,and testing standards based on gene(nucleic acid)omics.This paper systematically sorts out the characteristics of testing standards for different types of animal-derived ingredients,to provide theoretical support for testing institutions and supervision departments for food safety in aspects of method selection and policy formulation.
