摘要

Abstract

Probiotics and prebiotics has become more and more popular as important dietary supplements in recent years,but their industrial application suffers from the decrease of enzymatic activity during the processing,storage,and delivery to target sites in the gastrointestinal tract.Microencapsulation proves to be an effective method to improve bioavailability of probiotics and prebiotics.In this review,we summarized several preparation techniques for probiotics and prebiotics,including emulsification,extrusion,spray drying,freeze-drying and complex coagulation.In addition,we presented the properties of common microcapsule wall materials such as carbohydrates and proteins,which were applied in probiotic products.Our review will provide a theoretical guidance for the development and industrialization of probiotics and prebiotics using co-embedding technology.
