Abstract
Starch is a kind of natural polymer compound with a wide range of sources and is an important raw material for industrial production.Starch contains natural starch and modified starch.Modified starch can better meet the special needs of production and life.Among them,oxidized starch can not only improve the color and taste of food,but also change the characteristics of food,it is widely used in food industry.Based on the progress of preparing oxidized starch with sodium hypochlorite as oxidant,the paper reviewed the effects of the modified methods and the sources of starch,oxidation capacity of NaClO,pH of reaction medium,reaction temperature and reaction time on the properties of sodium hypochlorite oxidized starch.At the same time,the paper expounded the application of oxidized starch in food and industry fields,and put forward the prospect of application and development of sodium hypochlorite oxidized starch,so as to provide some research experiences for the preparation of sodium hypochlorite oxidized starch in the future.关键词
