Abstract

A significant increasing in the respiratory rate of the fruit can be caused by mechanical damage,accelerating its aging and decay.The antagonistic bacterium Variovorax sp.R1 was used to treat Nanguo pear and the effect of antagonistic bacteria on sugar metabolism in Nanguo pear under mechanical damage stress was studied.The result showed the sucrose contents in the fruits of the R1 fermentation supernatant and bacterial suspension treatment groups increased,which was 1.71 and 1.12 times higher than that of the control group after 5 d,respectively.The activities of sucrose synthase(SS)and sucrose phosphate synthase(SPS)were both increased in R1 treatment groups.The glucose and fructose contents and sorbitol dehydrogenase(SDH)activity of the fruits in the R1 fermentation supernatant treatment group were also increased,with an increase of 7.06%,18.52%and 4.22%respectively,compared to the control group after 7 d.The correlation analysis results showed that sucrose content was significantly positively correlated with SS and SPS activities,while the contents of glucose and fructose were significantly positively correlated with SDH activity.The results indicated that the soluble sugar content of Nanguo pear could be increased by antagonistic bacterium R1 through regulating the activity of sugar metabolism related enzymes,contributing to maintain the quality of Nanguo pear under mechanical damage stress.
