文章选用清香型铁观音与柚子花为材料,开展了不同窨制方式的柚子花茶窨制试验,探讨柚子花茶最佳窨制参数并对其主要香气成分进行分析.结果表明,在采用密闭窨制条件下,不同窨次柚子花茶样品的香气组成不同,除了含90种共同香气化学成分外,不同窨次柚子花茶样品还具特有香气化学成分,一窨、二窨、三窨花茶样品分别具有17、21、22种特有香气化学成分.文章初步总结出一套铁观音柚子花茶加工技术,为柚子花茶的加工提供参考.

Tieguanyin and pomelo flower were selected as the materials to conduct fragrance experiments of pomelo scented tea with different fragrance methods,to explore the best fragrance parameters and to analyze the main aro-ma components.The results show that under the closed scenting condition,the aroma contents of each pomelo scented tea samples were different.In addition to 90 common aroma chemical components,the pomelo scented tea samples also had 17,21 and 22 unique aroma chemical components,respectively.This paper summarized a set of Tieguanyin pomelo scented tea processing technology,and provided reference for the processing technology and in-dustrial development of pomelo scented tea.
