Citric acid fermentation from non-grain raw materials:a review
摘要
Abstract
Citric acid is an important organic acid produced by microbial fermentation,which is widely used in food,chemical,pharmaceutical,and other fields.China is the world's largest producer of citric acid,mainly using corn and dried potatoes as raw materials to produce citric acid by deep fermentation with Aspergillus niger.However,grain as raw material is not conducive to food security.Using non-grain raw materials to produce citric acid is an effective way to solve this problem.We reviewed the research status of citric acid fermentation of non-grain raw materials such as non-grain starch,glycerol,lignocellulose,and n-alkanes in recent years,discussed the current problems and future development,and provided a basis for the development of citric acid fermentation from non-grain raw materials.关键词
