Citric acid fermentation from non-grain raw materials:a review
柠檬酸是微生物发酵法生产的重要有机酸,被广泛应用于食品、化工、医药等领域.中国是全球最大的柠檬酸生产国,主要以玉米和薯干为原料利用黑曲霉深层发酵生产柠檬酸.然而,以粮食为原料不利于粮食安全.发展非粮原料生产柠檬酸是解决这一问题的有效途径,本文综述了近年来非粮淀粉、甘油、木质纤维素类和正构烷烃等非粮原料柠檬酸发酵研究现状,对目前存在的问题以及今后发展进行了讨论,以期为非粮原料柠檬酸发酵的发展提供依据.
Citric acid is an important organic acid produced by microbial fermentation,which is widely used in food,chemical,pharmaceutical,and other fields.China is the world's largest producer of citric acid,mainly using corn and dried potatoes as raw materials to produce citric acid by deep fermentation with Aspergillus niger.However,grain as raw material is not conducive to food security.Using non-grain raw materials to produce citric acid is an effective way to solve this problem.We reviewed the research status of citric acid fermentation of non-grain raw materials such as non-grain starch,glycerol,lignocellulose,and n-alkanes in recent years,discussed the current problems and future development,and provided a basis for the development of citric acid fermentation from non-grain raw materials.
