摘要

Abstract

Cold brew tea has the characteristics of easy brewing,unique flavor and health benefits,which is favored by consumers and has the huge market potential.We reviewed the research progress of cold brew tea products at home and abroad,including the characteristics of cold brew tea,preparation process,brewing method as well as cold brew tea beverage processing technology.Moreover,the current situation of cold brew tea market in China,the developing trend were interpreted,and the development strategies were raised,aiming to provide scientific guid-ance for the research and development of cold brew tea as well as its market cultivation and expansion.
