额外添加复合维生素对育肥牛生长性能、屠宰性能和肉品质的影响OA北大核心CSTPCD
Effects of extra multivitamins on growth performance,slaughter performance,and meat quality of finishing cattle
试验旨在探讨饲粮中额外添加不同脂溶性维生素添加剂对育肥肉牛生长性能、屠宰性能和肉品质的影响.试验选取日龄相近、体重(502.87±14.25)kg的健康西门塔尔杂交牛24头,随机分为4组,每组6个重复,每个重复1头牛.对照组饲喂基础饲粮,试验1组添加75 g/(头·d)复合维生素Ⅰ(VA9 000 IU、VD3 3 000 IU、VE 30 IU);试验 2 组添加 83 g/(头·d)复合维生素 Ⅱ(VA8300 IU、VD3 2 490 IU、VE 24.9 IU),试验 3 组添加98 g/(头·d)复合维生素 Ⅲ(VA 7 840 IU、VD3 1 960 IU、VE 19.6 IU).预试期 14 d,正式试验期 90 d.结果显示,试验组育肥牛的平均日增重较对照组分别增加了 2.91%、1.94%和1.94%(P<0.05),背膘厚度较对照组分别增加了 10.97%、10.68%和9.37%(P<0.05).与对照组相比,试验组牛肉的滴水损失显著降低(P<0.05),剪切力分别降低了 14.11%、13.09%和13.85%(P<0.05),肉色的L*值、b*值显著升高(P<0.05).试验组牛肉的丝氨酸含量显著高于对照组(P<0.05),胱氨酸含量显著低于对照组(P<0.05).研究表明,额外添加复合维生素能够改善育肥牛的生长性能、屠宰性能及肉品质,其中以VA 120 IU/g、VD3 40 IU/g和VE0.4 IU/g所形成的组合添加75 g/(头·d)效果较好.
The purpose of this experiment was to investigate the effects of adding different fat-soluble vitamin additives to the diet on the growth performance,slaughter performance,and meat quality of finishing cattle.Twenty-four healthy Simmental hybrid cattle with similar age and weight of(502.87±14.25)kg were randomly divided into four groups with six replicates in each group and one cattle in each replicate.The control group was fed with basal diet,and the experiment group 1 was fed with 75 g/(head·d)of multivitamin Ⅰ(VA 9 000 IU,VD3 3 000 IU,VA 30 IU),experiment group 2 was supplemented with 83 g/(head·d)of multivitamin Ⅱ(VA 8 300 IU,VD3 2 490 IU,VA 24.9 IU),and experiment group 3 was supplemented with 98 g/(head·d)of multivitamin Ⅲ(VA 7 840 IU,VD3 1 960 IU,VA 19.6 IU).The pre-test period was 14 days,and the formal test period was 90 days.The results showed that the average daily gain of finishing cattle in the experimental groups increased by 2.91%,1.94%,and 1.94%,respectively compared to the control group(P<0.05),and the backfat thickness increased by 10.97%,10.68%,and 9.37%,respectively compared to the control group(P<0.05).Compared with the control group,the dripping loss of beef in the experimental groups decreased significantly(P<0.05),the shear stress decreased by 14.11%,13.09%,and 13.85%,respectively(P<0.05),and the L*and b*values of meat color increased significantly(P<0.05).The serine content in the experimental groups was significantly higher than that in the control group(P<0.05),while the cystine content was significantly lower than that in the control group(P<0.05).The study indicates that adding multivitamins can improve the growth performance,slaughter performance,and meat quality of finishing cattle,and the combination of VA 120 IU/g,VD340 IU/g and VE 0.4 IU/g with 75 g/(head·d)has the better effect.
