Effects of organic selenium on growth performance,slaughter performance,meat quality,and antioxidant capacity of broilers
试验旨在研究有机硒对肉鸡生长性能、屠宰性能、肉品质及抗氧化性能的影响.选取1日龄罗斯308肉鸡360只,随机分为3组,每组6个重复,每个重复20只鸡.Na2SeO3组、Se-Met组和Nano-Se组分别以0.4 mg/kg硒水平添加亚硒酸钠、硒代蛋氨酸和纳米硒.试验期42d.结果显示,1~21日龄,Se-Met组料重比显著低于Na2SeO3组(P<0.05).Nano-Se组和Se-Met组的腹脂率显著低于Na2SeO3组(P<0.05).与Na2SeO3组相比,Nano-Se组肉鸡的胸肌a*值显著增加(P<0.05),Se-Met组和Nano-Se组肉鸡的胸肌系水力显著增加(P<0.05).与Na2SeO3组相比,Nano-Se组肉鸡的胸肌总抗氧化能力(T-AOC)、超氧化物歧化酶(T-SOD)和谷胱甘肽过氧化物酶(GSH-Px)活性显著增加(P<0.05),Se-Met组和Nano-Se组肉鸡的胸肌丙二醛(MDA)含量显著降低(P<0.05).研究表明,有机硒能够有效改善肉鸡的生长性能、屠宰性能、肉品质和抗氧化能力,其中纳米硒效果优于硒代蛋氨酸.
This study aimed to investigate the effects of organic selenium on the growth performance,slaughter performance,meat quality,and antioxidant capacity of broilers.A total of 360 one-day-old Ross 308 broilers were randomly divided into three groups,with six replicates in each group and 20 chickens in each replicate.The Na2SeO3 group,Se-Met group,and Nano-Se group were supplemented with sodium selenite,selenomethionine,and nano selenium at a selenium level of 0.4 mg/kg,respectively.The experimental period was 42 days.The results showed that during the 1~21 d,the feed-to-gain ratio of the Se-Met group was significantly lower than that of the Na2SeO3 group(P<0.05).The abdominal fat percentage of the Nano-Se and Se-Met groups was significantly lower than that of the Na2SeO3 group(P<0.05).Compared with the Na2SeO3 group,the a*value of the pectoral muscle in broilers from the Nano-Se group was significantly increased(P<0.05),and the water-holding capacity of the pectoral muscle in broilers from the Se-Met and Nano-Se groups was significantly increased(P<0.05).Compared with the Na2SeO3 group,the total antioxidant capacity(T-AOC),superoxide dismutase(T-SOD),and glutathione peroxidase(GSH-Px)activities in the pectoral muscle from the Nano-Se group were significantly increased(P<0.05),and the malondialdehyde(MDA)content in the pectoral muscle of broilers from the Se-Met and Nano-Se groups was significantly reduced(P<0.05).The study indicates that organic selenium can effectively improve the growth performance,slaughter performance,meat quality,and antioxidant capacity of broilers,with nano selenium showing better effects than selenomethionine.
