噬菌体内溶素在食品中的应用进展
Application progress of phage endolysin in food
摘要
Abstract
The emergence of drug-resistant bacteria has brought serious threats and challenges to food safety.Phage endolysin,which can lyse peptidoglycan component of bacterial cell wall,is a kind of hydrolase produced by double-stranded DNA phage in the late replication period.Endolysin applica-tion is safe and residual-free,and hardly to gain resistance in the prevention and control of food-borne pathogens.The relevant structural characteristics and lyse process of phage endolysin were systematically introduced,and the latest research progress and application of phage endolysin in the prevention and control of food-borne pathogens were summarized,and the future application in food safety was prospected.关键词
