High Pressure Processing(HPP),as a kind of modern High-tech,is very important in food indus-try and has a broad application prospect.This paper mainly introduces the concept,function principle,present situation and existing problems of ultra-high pressure technology at home and abroad,and introduces the appli-cation of ultra-high pressure in other fields.关键词
