摘要

Abstract

Cereal foods are the main food in our country, but they are easily contaminated by mycotoxins. Among all mycotoxins, aflatoxin B1 (AFB1) is one of the most toxic carcinogens. Therefore, it's of important significance for our country's food safety to conduct fast, accurate and on-site detection of AFB1 in cereal. This paper overviewed AFB1 and its related limit requirements, reviewed the current research progress of AFB1 detection methods in cereal, focused on the application of new aptamer sensor technology in this field, and analyzed the advantages and disadvantages of each method, in order to provide some references for the related research.
